We provide quality beef & pork for your table. Our meat is hormone-free, receives minimal antibiotics, is fed a holistic custom diet, and is compassionately raised.
We are the 5th generation to farm our land. Three brothers raise cattle, hogs, and grain crops with their families and parents.
Operating within the Indiana State Board of Animal Health Custom Processing rules, we have booked butcher spots with many local butcher shops, also known as processors. We take your order of beef & pork and deliver the animals to the butcher shop. You give the butcher your cut instructions (how thick you like your steaks, roasts, etc.) and package instructions (1lb, 2lb ground meat, 2 or 4 steaks to package, etc). When it is complete, you pick up the order and pay the butcher for their services at the butcher shop.
Please see below for more ordering details.
The first step is to place your order online.
Choose your preferred butcher shop location, the butcher date, and the amount you would like. Follow the steps to complete the online checkout.
If the butcher date/amount you want is unavailable, please email us to be put on a backorder list. Occasionally, we can adjust inventory based on how many people wish to have halves and quarters versus whole quantities of meat.
Payment is taken at the time of placing a backorder. If we cannot fill your request, we can issue refunds on back orders only but not on placed orders due to Indiana Board of Animal Health Regulations.
There are 2 payments involved with your order.
For your convenience, we have implemented a simple flat rate pricing for our custom beef and pork.
1. The first payment is submitted here electronically online. This pays for your animal from Middle Fork Farms. (Online Orders are final.)
2. The second payment is to the butcher for the harvest and cutting fees. You will pay for this service when you pick up your beef/pork at the butcher shop. Each butcher shop offers various services and has a separate pricing structure.
You will call the butcher shop on the butcher date.
You will give them your information: name, phone number, order number, and our name, and confirm what you ordered from us (quarter, half, whole, beef/pork). Let them know you want to talk about your cut instructions.
If you are new to ordering custom butchered meat, let them know. They are experts at this and will walk you through the various options. We have included a few links on our Beef and Pork pages to help you get aquatinted with the cuts of meat. Butcher shops have different offerings, sausage flavors, methods of cure and smoking, and packaging.
You are picking up your order at the butcher shop.
When you talk with the butcher, they can tell you when your beef/pork will be ready to pick up. You must arrange to pick it up within the week. Most butcher shops charge a cold storage fee for more extended storage. They always have more inventory coming in the door and need to move orders through.
When picking up and paying for your butchered meat, double-checking your order is always a good idea. Also, bring enough coolers for the trip home.
Check our website and Facebook frequently.
We are adding new butcher dates regularly. You may see a butcher shop you prefer but cannot place an order. There is the option to place a backorder. Simply contact us with your preference. sales.MiddleForkFarms@gmail.com
What does it mean to purchase a custom butchered steer or hog?
In short, you are buying the animal from us. We haul it to the butcher shop, and you call the shop to tell them how you want it cut, seasoned, cured, and packaged. The custom-ordered meat is yours. And not for resale, according to the Indiana State Board of Animal Health.
How long can I freeze meat? According to the USDA, frozen meat is good indefinitely, but the quality deteriorates after 4-12 months.
How much meat do I get? According to the ISBAH, a 1000 lb steer will yield about 465 lbs and a 200 lb hog will yield 101 lbs. Our beef cattle weigh approximately 1200-1500 lbs, and our hogs weigh 260-300 lbs. Please note that these figures include organ meat, soup bones, and other cuts of meat that you may elect not to receive.
