It allows for a wide variety of cuts of meat from the entire animal. It minimizes waste and allows for bulk purchasing, often at a higher value and higher quality.
Overall, custom butchering enhances the culinary experience.
According to the Indiana State Board of Animal Health, the custom-ordered meat is yours and not for resale.
You can order online or by calling 317-753-7739. To order online, choose your butcher shop location, desired butcher date, and quantity (quarter, half, or whole), then complete checkout.
We’ll text you a reminder to call with your cut instructions on your butcher date. For more details, check the pork and beef cut charts or call us—we're happy to help!
Finally, pick up your custom butchered beef or pork from the shop and pay the butcher separately. Enjoy your meal!
The payment process involves two steps:
1. The initial payment is made online or via check, directly to us, the farmers. Please note that all orders are final.
2. The second payment is made at the butcher shop for their services, payable upon pickup. Pricing varies by butcher, with additional fees for services like patties, links, and curing.
On your butcher date, call the butcher shop and provide your name, phone number, our name, and your order (quarter, half, whole, beef or pork). They will guide you through cut options and allow you to specify any special requests, such as thickness of chops, roast size, or sausage flavors. Each butcher shop has a variety of offerings, sausage favors, methods of curing and packaging.
It depends on many factors. The main ones are the animal's live weight and how you choose to have it butchered.
For example,
Hog A (280 lbs) yields 170 lbs of bratwurst links at $300 (sausage, links, and curing are an upcharge).
Hog B (280 lbs) yields 202 lbs for $205 (various cuts including chops, roasts, ribs, bulk sausage, and bacon; no cured ham).
We have a partnership with a butcher shop that allows for resale and restaurant usage. We would be happy to work with you in following state regulations and guidelines for these purposes.
According to the Indiana State Board of Animal Health, the custom-ordered meat is yours and not for resale when purchased through our custom butchering.
